Breakfast casseroles are a great way to feed a crowd or to have a hearty breakfast ready for the week. Here’s a recipe for a breakfast casserole with hashbrowns:

Ingredients:

  • 1 bag (30 ounces) frozen shredded hash brown potatoes
  • 1 pound bulk pork sausage
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • salt and pepper, to taste

Instructions:

Step 1

Preheat the oven to 350°F.

Step 2

In a large skillet, cook the sausage over medium heat until it is browned, breaking it into small pieces as it cooks.

Step 3

Add the onion and bell pepper to the skillet and continue to cook until the vegetables are soft.

Step 4

In a large mixing bowl, whisk together the eggs and milk. Season with salt and pepper.

Step 5

Add the cooked sausage mixture, hash browns, and shredded cheese to the mixing bowl with the eggs and stir to combine.

Step 6

Transfer the mixture to a greased 9×13-inch baking dish.

Step 7

Bake the casserole for 35-45 minutes, or until it is set in the middle and the top is golden brown.

Step 8

Allow the casserole to cool for a few minutes before serving. Enjoy!

You can also customize this recipe to your liking by adding in additional vegetables, such as diced tomatoes or spinach, or by using a different type of cheese. You can also use a different type of protein, such as bacon or diced ham, in place of the sausage.
