These matcha cookies are perfect: crackly around the edges, soft and chewy on the inside with just the right amount of bittersweetness.

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup matcha powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar, for rolling

Instructions:

  1. In a medium mixing bowl, whisk together the flour, matcha powder, baking powder, and salt. Set aside.
  2. In a separate large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy. This will take about 3-4 minutes using an electric mixer, or longer if mixing by hand.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. You can use a spatula or a wooden spoon to mix the dough, or an electric mixer set to low speed.
  5. Once the dough comes together, it should be soft and slightly sticky. If the dough is too dry, you can add a little bit of milk or cream to moisten it. If the dough is too wet, you can add a little bit more flour to firm it up.
  6. Cover the dough with plastic wrap and refrigerate for at least 1 hour or up to overnight. This will allow the dough to firm up and make it easier to work with.
  7. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  8. Place the powdered sugar in a shallow dish.
  9. Scoop out 1 tablespoon of dough and roll it into a ball. The dough will be soft and slightly sticky, so it’s best to use a cookie scoop or a spoon to portion out the dough.
  10. Roll the ball in the powdered sugar to coat it completely. Place the ball on the prepared baking sheet. Repeat with the remaining dough, spacing the balls about 2 inches apart.
  11. Bake the cookies for 10-12 minutes, or until the edges are set and the tops are slightly cracked. The cookies will spread slightly as they bake, so be sure to leave enough space between them.
  12. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
