Sausage rolls, but make them vegan! Both hearty and delicious, this holiday appetizer is made with store bought puff pastry (make sure it’s vegan-friendly) to make it extra simple. They’re without a doubt one of my favourites to serve to guests during the holiday season. A hearty mushroom and chestnut filling is complimented by a tangy, yet sweet cranberry sauce then wrapped in a flaky puff pastry. I am seriously obsessed with these vegan cranberry mushroom sausage rolls, and I have a feeling you will be too!
Ingredients:
- 1 sheet frozen puff pastry, thawed
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 ounces crimini mushrooms, finely chopped
- 1/2 cup dried cranberries
- 1/2 cup cooked lentils
- 1/4 cup chopped fresh parsley
- 2 tablespoons vegan Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 egg, beaten (or 2 tablespoons aquafaba for a completely vegan version)
Instructions:

Step 1
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2
Heat the olive oil in a large pan over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
Step 3
Add the mushrooms and cook until they are soft and have released their moisture, about 5-7 minutes.
Step 4
Add the cranberries, lentils, parsley, Worcestershire sauce, thyme, paprika, salt, and pepper to the pan and mix well. Cook for an additional 2-3 minutes, or until the mixture is heated through. Remove the pan from the heat and let the mixture cool slightly.
Step 5
Unfold the puff pastry sheet and roll it out slightly on a lightly floured surface. Cut the pastry into 4 equal rectangles.
Step 6
Divide the mushroom mixture evenly among the rectangles, placing it on one side of each rectangle. Brush the edges of the pastry with the beaten egg (or aquafaba).
Step 7
Fold the pastry over the filling and press the edges together to seal. Cut a few slits in the top of each roll to allow steam to escape.
Step 8
Place the sausage rolls on the prepared baking sheet and brush the tops with the remaining beaten egg (or aquafaba).
Step 9
Bake the sausage rolls for 20-25 minutes, or until the pastry is puffed and golden brown.
Step 10
Serve the sausage rolls warm, with dipping sauce or condiments of your choice.
